Coconut Chicken Fingers

Another winner from Cooking Light, got this one from Super Fresh & Simple Meals

4-6oz skinless, boneless chicken breast halves, cut into 1/2 inch thick strips (I cheated and bought them already cut up)
1/2 t salt
1/4 t ground red pepper (cayenne)
1 C rice flour
1 C whole buttermilk
1 large egg
1 1/2 C unsweetened flaked coconut (I couldn't find any so used the sweetened kind)
3 T canola oil
Sweet Chili sauce (optional)

Sprinkle chicken with salt and red pepper
place flour in shallow dish
combine buttermilk and egg in a shallow dish, stirring well
place coconut in a shallow dish
dredge chicken in flour, shake off excess
dip chicken in egg mixture
dredge chicken in coconut
heat a large skillet over med-high heat
add oil to pan and swirl to coat pan
add chicken to pan: cook 6 minutes or until done (I did 4 minutes a side, I should have probably done it 5 each and turned down the heat a little) turning to brown
Serve with chile sauce if desired

Yield 6 servings (approx 4.5 oz)

    sounds right up my alley! Maybe some pineapple, green pepper and onion salad as a side dish!

    I would say yes using the sweetened coconut. I liked the contrast with the chili sauce too!

  • This sounds Super Yummy! I get unsweetened coconut from Bob's Red Mill, which you can do mail order... they also have nice coconut flour and lots of gluten free grains and flours. I have always found their shipping reasonable adn very fast!
