    one that I really like lately is buttermilk chicken. you marinate the chicken in buttermilk and rosemary (or spice of your choice). I let it marinate in the fridge for 2-3 days and then grill it. Tastes great hot or cold and you can make sandwiches or top salad with it etc. It is really yummy.

    I believe the recipe is 1 cup buttermilk and a Tbsp of rosemary. Thyme is also very good

    Ive been trying out some new things with chicken. I am in love with chicken tacos, pretty self explanatory on the recipe lol, chicken pizza is amazing and surprisingly super low in fat! Also, i love using homemade noodles (you can use rotini), low sodium chicken broth, chicken pieces, carrots and celery, then i layer it over homemade mashed potatoes made with skim milk and i cant believe its not butter. The possibilities are endless, stock up on spices and herbs! Just try stuff out.:flowerforyou:

    This was really good. Served it with some asparagus, red & yellow peppers, garlic and onions sauteed in a little olive oil and butter.

    Crispy Ranch Chicken

    Ingredients

    4 boneless skinless chicken breasts
    1 oz pkg ranch dressing mix
    2 cups crispy rice cereal
    1/4 cup grated parmesan cheese
    2 egg whites (beaten)
    2 tablespoons light butter (optional)


    Directions

    Mix rice cereal, ranch mix and parmesan cheese together in bowl. Dip chicken in egg whites, then in the cereal mixture to coat evenly. Arrange chicken on greased baking sheet. Bake until golden. 30 to 35 minutes.

    Slow cooker Cream Italian Chicken

    Ingredients

    *1.5 lbs boneless, skinless chicken breasts
    *1 pkg Good Seasons Italian dressing mix
    * 1/4 cup water
    * 1 8oz pkg low fat cream cheese
    *1 can 98% fat free cream of chicken soup
    *3 cups cooked white, long grain rice


    Directions

    *1. Place chicken in crock pot
    *2. Mix together Italian dressing mix and water. Pour over chicken.
    *3. Cover and cook on high for 4 hours OR low for 8 hours.
    *4. Mix together cream cheese and soup in separate bowl.
    *5. Carefully remove chicken from crock pot to plate.
    *6. Pour cream cheese/soup mixture into crock pot and mix together with dressing in bottom.
    *7. Return chicken to crock pot and mix gently to shred the chicken.
    *8. Cook on LOW until heated through.
    *Serve with rice or noodles.
    **You may add skim or low fat milk in very small quantities to thin the sauce a little. It does not significantly affect the nutritional value if you use up to 2 tablespoons**
    Makes 6 servings. Approximately 2/3 cup mixture with 1/2 cup rice.
    This recipe can be made with FAT FREE cream cheese and it saves about 6 grams of fat. However, I feel that the dish benefits from the flavor of the low fat over the fat free.

    Penne with Chicken and Asparagus

    INGREDIENTS (Nutrition)

    * 1 (16 ounce) package dried penne pasta
    * 5 tablespoons olive oil, divided
    * 2 skinless, boneless chicken breast halves - cut into cubes
    * salt and pepper to taste
    * garlic powder to taste
    * 1/2 cup low-sodium chicken broth
    * 1 bunch slender asparagus spears, trimmed, cut on diagonal into 1-inch pieces
    * 1 clove garlic, thinly sliced
    * 1/4 cup Parmesan cheese

    DIRECTIONS

    1. Bring a large pot of lightly salted water to boil. Add pasta, and cook until al dente, about 8 to 10 minutes. Drain, and set aside.
    2. Warm 3 tablespoons olive oil in a large skillet over medium-high heat. Stir in chicken, and season with salt, pepper, and garlic powder. Cook until chicken is cooked through and browned, about 5 minutes. Remove chicken to paper towels.
    3. Pour chicken broth into the skillet. Then stir in asparagus, garlic, and a pinch more garlic powder, salt, and pepper. Cover, and steam until the asparagus is just tender, about 5 to 10 minutes. Return chicken to the skillet, and warm through.
    4. Stir chicken mixture into pasta, and mix well. Let sit about 5 minutes. Drizzle with 2 tablespoons olive oil, stir again, then sprinkle with Parmesan cheese.
