Any one have a yummy healthy slow cooker recipe for chicken breast?

    I have a slow cooker recipe with buffalo! A great source of CLA (fatty acid that may favorably affect body composition) if the buffalo is grass fed :) Here ya go:

    Preparation: Spray a skillet with nonstick cooking spray. Brown buffalo meat in the skillet over medium-high heat until cooked through. Place in a slow cooker along with all other ingredients. Turn cooker on high and simmer for 6-8 hours.

    ~Makes six servings~

    1 lb. ground buffalo meat
    1 onion, chopped 2 cloves garlic, minced
    2 stalks celery, chopped
    1 large carrot, chopped
    3 tomatoes, chopped (or 1 can stewed tomatoes)
    2 bay leaves
    1 Tbsp. paprika
    1 tsp. black pepper
    1 cup red wine
    1 (14-oz.) can low-sodium beef broth Nonstick cooking spray

    Nutrition facts (per serving): 247 calories, 17 g protein, 14 g carbohydrate, 13 g fat, 2 g fiber

    1 can Reduced Fat cream of chicken or mushroom soup
    1 cup salsa
    1 packet Taco seasoning

    Cook on high for 5 hours or high for 8. Shred chicken and add 1/2 cup Light or Fat Free sour cream. Can serve over rice, noodles, in tortilla shells as taco filling, on baked chips as nachos. Lots of uses.

    1 packet Taco seasoning

    Cook on high for 5 hours or high for 8. Shred chicken and add 1/2 cup Light or Fat Free sour cream. Can serve over rice, noodles, in tortilla shells as taco filling, on baked chips as nachos. Lots of uses.
    UH YUM?!?! lol So want that right now!!! Mission Tortilla makes yellow corn torillas that are extra thin and 2 are only 80 cals.

    Here's a Chicken Cacciatore recipe I found on my crock pot app:

    3 chicken breasts (I use boneless, skinless)
    1 tsp salt
    1 dash pepper
    1 Tablespoon onion flakes
    1 green pepper chopped
    1 teaspoon garlic minced
    15 ounces canned tomatoes (I use Pomi in box or Eden organic to make sure I am not getting a can with BPA)
    4 ounces sliced canned mushrooms, drained (I usuallly make without or use fresh)
    2 tespoons tomato paste (buy in glass jar to avoid BPA)
    1 bay leaf
    1/4 tsp thyme
    1 onion chopped

    Combine all ingredients in slow cooker, Add chicken to top
    Cover and cook on low 7-9 hours (although my newer crockpot cooks a lot faster than that!)

    Can serve with rice.

    With 3 8 ounce breasts it is 286 calories per serving with 14 g carbs, 5 grams fat, 49 grams protein, 3 grams fiber, 7 grams sugar

    When using the slow cooker, I suggest boneless skinless thighs. Once you trim them they are about the same calories as breast but they hold up a lot better in the slow cooker. Even if you don't like dark meat baked/roasted, the slow cooker dark meat is a completely different thing.

    ya i did use thighs doing butter chicken and were quite good, I just have some chicken breasts in the freezer I want to use up

    Oh yea, I LOVE those tortillas! I use those for making enchiladas too!

    Putting the following into the crock pot tomorrow morning for dinner...

    2 leeks, chopped
    1 red pepper, chopped
    3/4lb yellow wax beans, cleaned and chopped
    5 cloves garlic
    2 tomatoes, chopped
    1/2 tin no salt added diced tomatoes
    12oz cooked turkey breast sausage
    1 cup beef/chicken broth - no salt added
    2 tsp oregano, dried
    2 tsp montreal chicken spice (or cajun seasoning)
    1 tsp cayenne
    1/2 tsp dried thyme
    1/2lb chicken meat (we have some leftovers so I'll add it in near the end), chopped
    360g cooked shrimp (also added at the end)
    1/2 cup fresh cilantro, chopped

    Will toss everything in apart from the cilantro and chicken/shrimp. Cooking it on low 6-8 hours total and may end up thickening it with some cornstarch near the end. I'll let you know how it goes!

    I have heard that chicken breasts plus a jar of salsa in the slow cooker = delicious and very easy taco/burrito filling. I haven't bought chicken breasts in a bit, though, so I have yet to try this myself.

    I can tell you that 2 chicken breasts, 1 jar of your favorite salsa, and some shredded cheese in the slow cooker is DELICIOUS. My significant other requests it on a weekly basis. And the calories are pretty low, especially if you eat it without anything else.


    Definitely recommend this to anyone looking for a great meal. And it makes your home smell absolutely delicious. Even my dogs walk around licking their chops! :smile:

    Super easy: chicken breasts (or thighs as some people have suggested), 1 jar salsa, 1 can corn, 1 can black beans.
    Use in a wrap, on baked tortilla chips, on a bed of lettuce, or by itself.

    • 1 Sweet Potato, peeled and cubed
    • 2 Carrots, chopped
    • 3-4 Small potatoes, cubed
    • 2 Stalks Celery, chopped
    • 1 onion, chopped

    • 1 can of reduced fat cream of celery soup
    • 1/2 can-3/4 can water
    • Pepper
    • Parsley flakes
    • 6 Boneless, skinless chicken thighs
    Place all items in crockpot. Cook on low 8 hours
    Serves 4.

    1 pound shredded, cooked chicken
    1 (15 ounce) can whole peeled tomatoes, mashed
    1 (10 ounce) can enchilada sauce
    1 medium onion, chopped
    1 (4 ounce) can chopped green chile peppers
    2 cloves garlic, minced
    2 cups water
    1 (14.5 ounce) can chicken broth
    1 teaspoon cumin
    1 teaspoon chili powder
    1 teaspoon salt
    1/4 teaspoon black pepper
    1 bay leaf
    1 (10 ounce) package frozen corn
    1 tablespoon chopped cilantro
    7 corn tortillas
    vegetable oil

    Directions
    1. Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker. Pour in water and chicken broth, and season with cumin, chili powder, salt, pepper, and bay leaf. Stir in corn and cilantro. Cover, and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours.
    2. Preheat oven to 400 degrees F (200 degrees C).
    3. Lightly brush both sides of tortillas with oil. Cut tortillas into strips, then spread on a baking sheet.
    4. Bake in preheated oven until crisp, about 10 to 15 minutes. To serve, sprinkle tortilla strips over soup.
