Italian Bean Soup (easy recipe!)
1 onion, chopped
5 cloves garlic, minced
1 carrot, shredded
1-2 stalks celery, chopped
2 cans chicken broth
1 can pinto beans, drained
1 can white kidney beans, drained
1 can garbanzo beans, drained
1 can black eyed peas, drained
1/2 cup acini pasta
1/2 teaspoon italian seasoning
Sautee onion, garlic in olive oil. Add seasoning. Add carrot and celery. Add chicken broth and pasta and cook for 10 minutes. Add beans and cook for another 10 minutes. Done!
Very delicious and filling!

285 cals/serving, assuming the batch makes 8 servings. Then again, I've had 5 "helpings" and have about half the container left...0 -
