Eggplant

Okay so this may be a stupid question..but I am making an Italian veggie soup tonight and using fresh eggplant..I have seen you can prepare it either peeled or unpeeled..just curious how you other MFP's prepare it? To peel or not to peel? That is the question.

    You can do it either way. Like most things, there is a lot of nutrition in the skins. Some find the skin a little tough, but I always leave it on :-)

    I peel, unfortunately. I wish I could learn to love the peel; there are lots of excellent nutrients in the skin. Don't let my preference stop you from trying it with the skin on though!

    I peel and have never had it unpeeled, so I am a bit biased. I bet most of the nutrients are in the skin just like everything else.
  • I like it best without the skin but usually leave it on. If its a long slow cooking soup the skin will probably tenderize a bit.

    I usually eat it unpeeled, just chop it up!! Before cooking though I'll sprinkle salt on it a leave for a while, it helps get the bitterness out of it, then rinse and pat dry :-))

    I like 'em with peels on. I find that without peels, the insides get so squishy and fall apart easily (especially when added to stir-fry). Plus, I like the taste and texture of the peels. :)
  • Thanks so much for all the suggestions...I may just leave the peel on because the soup will be cooking for a good 2 hours or so..this is my first time to use fresh eggplant :)
