Carrot Cake

I posted my carrot cake recipe on my blog. For your calorie counting convenience, I separated the recipes for frosting and cake, and included nutritional info for each. I also registered them here in the database (not sure when they are available).

    Wow.. I LOVE LOVE Carrot cake! I was reading your recipe, and wondered if I could substitute a few things and make it even less cals..may have to try it! :) Sounds GREAT!

    It's pretty moist, so you might be able to get away with nixing the canola oil all together, or using a tablespoon. Experiment of course. If you read my blog post, you'll see that my hand was a little forced when it came to overhauling the calories on this one...lol

    It's also a little lower in cal and sugar than reported. I can't find calorie info for an 8 oz can of DRAINED crushed pineapple. Cuts a little bit of the sugar.
