Did a quick googling and found this from the Hungry Girl site:

I have never tried them, but I hear that shirataki noodles are either no calories or very low in calories.
Personally, I'd rather eat some whole grains, or some noodles made from whole grains such as brown rice noodles. Worth every calorie, and very filling as well as delicious. And healthy, too!
Let me know what you think of the shirataki noodles if you try them. :-)0 -
There's always spaghetti squash as noodles. YUM!0

Even if it is advirtised as being zero calorie, says so on the package, it is not. Thanks to the FDA regulation, if a "serving" (also not regulated) is below 5 calories it can claim zero calories. Like spray "butter" http://www.diet-blog.com/11/are_spray_butters_a_healthy_choice.php
The only zero calorie anything is water.0 -

They are so tasty. =D0 -
That makes me really leery. If you love it, I'm happy for you.0 -
They're made from an insoluble fiber. Yams I think. And there's 5 serving in a 1 lb bag, so even at the FDA max that's a lot of noodles for 24.5 calories.
They tend to taste like what you cook them in, so warm them up in the sauce and you'll be doing yourself a favor.0 -
Shiratki noodles are indigestible fiber, so they contain no calories. They are great once you rinse and boil the lime stink out of them, especially in noodle salads.0

I don't trust anything with no calories. If it has no calories it is not natural. I would rather eat less then eat altered food.0

I got some of the shirataki noodles a couple weeks ago and after I rinsed them I cooked them in a hot pan with a little sesame oil. They were pretty good.0
