slow cooker, low cal?

Just got my first slow cooker today. I want to use it tomorrow, any ideas of low cal healthy things i can cook in it? Thanks

    Red beans and lentils. So good together.

    1 cup red beans
    1 cup lentils
    1 tbsp curry
    1 tbsp cumin
    1/2 cup onion
    1 tbsp minced garlic
    1 can veggie broth
    add enough water so that it's an inch over mixture
    cook on low 8 hours or longer
    high 5 hours.

    goes great over brown rice or quinoa

  • thanks, i've not long since re-stcoked the food cupboard with brown rice, wholewheat pasta etc so could def give that a go!

    There are some great recipes on www.skinnytaste.com. My personal favorite is the chicken taco chili!

    thick and hearty old fashioned beef stew!

    2 tablespoons oil
    3 tablespoons flour
    1 1/2 pounds beef stew meat (get it at costco already cut up)
    1 package mccormick beef stew seasoning mix (the secret ingredient :))
    3 cups water
    5-6 cups fresh veggies (i use baby potatoes, carrots, celery and onions)

    in your crockpot, put in the oil and let it heat up a bit.
    coat the meat with flour and toss it in the crockpot.
    pour in the water, mix in the seasoning and veggies.
    cook on low for 8 hours.

    This sweet and spicy salmon is AWESOME. I leave out the salt and it comes (by my calculations) to 199 calories for a 4 oz. piece.

    This is good with any white fish. It came out to 145 calories for a 4 oz. piece when we used Pacific sole instead of tilapia.
