What to do with my pumpkins?

I bought 2 small pumpkins for halloween and had the kids paint them with washable, non toxic paint. After monday, I will be able to wash the paint away and use them for.....something LOL I never cooked pumpkins before. Do you think I can make a kind of pumpkin sauce that I can freeze then use all year long? Any easy recipy?

    I would look up a pumpkin pie mix recipe and make that. you can put it in smoothies, or make some pumpkin pie parfaits with it. I have also made pumpkin soup this year with it.

    Don't throw away the seeds!! That is my favorite part of the pumpkin. Just salt them and roast them at 325 for about 30 minutes. Great snack!
  • Ooh! Pumpkin soup, pumpkin butter, pumpkin muffins, pumpkin cheesecake (low fat, of course!), stir cooked pumpkin into oatmeal. And then pretty much any recipe that calls for butternut squash will take pumpkin as a substitute.

    I always prep and freeze my halloween pumpkins so that I can use it to make my thanksgiving pumpkin pie. That way I know what is going into it and it makes for a healthier choice during the holiday season. I have gotten into baking vegan desserts as a healthier choice and I am going to try my hand at a vegan pumpkin pie this year.

    You can make a stuffed pumpkins with them. Fill them with wild rice mixture, bake and serve. When serving use a big spoon and make sure you scrape the pumpkin and serve with rice filling. I have made this several times and brought it to Thanksgiving dinner. It is really good. You can stuff it with anything you want really. i.e. - rice, beans, stuffing (bread kind), meats. I have also seen some recipes where they make a pumpkin soup and serve it in the hollowed pumpkins!
