Cooking pumpkin seeds

1. Scoop pumpkin seeds out of pumpkin
2. Separate fibers from seeds (warm water in a bowl helps)
3. Rinse seeds in a strainer.
4. For every 1/2 cup of seeds you put 2 cups of water in a pot, and 2 table spoons of preferably sea salt in the pot.
5. Bring water to a boil (make sure salt is dissolved) Simmer seeds for 10 minutes.
6. Put seeds on paper towels to dry. (if you want to dry faster dry them by rubbing them)
7. Put some olive oil on a baking sheet.
8. Then spread seeds evenly and salt as desired (you may need to put more oil on seeds)
9. Put oven at 250 degrees and stir pumpkin seeds every 10 minutes until they are dry.
It can take about 30 minutes to an hour depending on how wet your seeds were.
Serve and enjoy Happy Halloween

Just roasted mine this morning with some low fat margarine melted over the top and some Pampered Chef sprinkles (caramel and apple sprinkles) very lightly sprinkled over the top. Boy, does that make the house smell delish!!0

And don't forget to raid the spice cabinet before you pop them in the oven!
garlic and/or onion powder adds a savory tang;
cumin, cayenne, and chili powder gives a southwest bite;
curry powder for a southeast asian fling;
some jerk powder for a trip to the Islands. . .

mmmm I Love Cooking Pumpkin Seeds this time of year. Brings back great memories of my time with my children! You can add a little Jalapeno juice and/or cayene pepper (at the boil) to make them a little spicy for the "Big Guys".0
