very simple low calorie/low fat coconut dessert!
For coconut lovers, here's a recipe of a delicious dessert called "manjar de côco" (in portuguese)!
Ingredients:
1 Lt milk
200ml/7oz. of coconut milk
6 tablespoons of corn starch
8 tablespoons of sugar
100g of grated coconut
Directions:
Dilute the corn starch in one cup of milk,
Add all ingredients in a tall pan and put in the oven, stir
When it starts to thicken, keep stirring for about 1 minute
Pour the mixture in a container (it can be any size, wet the container first)
Let it cool and put in the fridge for 2 hours!
The original recipe has plum sauce on top but I never tried.
