I made the couscous dish last night.
I used ground beef instead of chicken. The reason I did this was because I had some thawed that I needed to use or it would have had to have been tossed. For my veggies I used corn and peas. The couscous I purchased was flavored, olive oil garlic. I never had couscous before and I wasn't entirely sure what I was going to think about it, but I really enjoyed it.
This is definitely quick and easy! My Monday nights are super hectic, so this was the best night for this.
On Thursday I'll be making the nuggets!0 -
I made the couscous dish (sort of) two nights ago...or DH made it :-)
We used pearl ( Israeli) couscous, which is larger and more like pasta. We used pork as the meat and I did zucchini and yellow squash as the veggies.
The meal was similar to our regular ones but it was good to have an excuse to use our new couscous!0 -
I made the chicken and zucchini today.
When it came to making the chicken I realized that I didn't have enough bread crumbs or ANY panko. So I pulled out some Saltine crackers and mashed them up and added them to the rest of the bread crumbs. Also, I didn't have garlic powder for the zucchini so I used onion powder instead.

We made the chicken & zucchini for dinner the other night. The chicken was a bit dry, but adding honey as a sauce to dip in made it better!
The zucchini (& onions & mushrooms for DH) we did in tempura batter instead and they were very good, but of course fried.
Next time we might try larger strips of chicken so they won't have to bake as long to brown but the baked "fried" chicken idea is very cool!0 -

Looking for some new recipes0

Ok so I will call this a "I need to go grocery shopping what can I put together with what I have left" kinda recipe. Super simple and nothing special needed which is the only kind of stuff I know and that is only because of my bf.
The positive is you need 8 ingredients!
4 chicken skinless boneless chicken breasts
1 c. couscous
2 frozen veggies of your choice
1 tbsp olive oil
2 cans chicken stock
S&P to season as you like
3 cloves of garlic
a bit of fresh (or dried) parsley
1. Dice the 4 chicken breasts into 1" cubes
2. In a nonstick pan brown chicken with olive oil,S&P, and garlic. Once Chicken is browned add the 2 veggies and the second can of chicken stock, once veggies are cooked through. Put them aside and seperate from sauce in pan. Keep the sauce!
3. In a sauce pan bring 1 can of chicken stock to boil, once to boil add couscous and take off of heat. Cover for five minutes and that part is done.
4. Fluff couscous with fork and dish onto plate to use as bed for chicken and veggies, once the chicken and veggies are present, drizzle with sauce.
And now I know I need to look up nutrition info as it was something made last night. So I will have to get to that part later! Sorry!
