Fish for supper
I'm craving fish, so for supper I pulled some out. But, I don't know how else to cook it besides frying it in butter.
Does anyone have any alternate ideas or recipes they would like to share with me please
I don't know if it makes any difference, but it is a basa fillet.
mmmm.. fish! haha. (I also am stuck on what to have with it? any suggestions?)

I usually do mine in the oven ..... with lemon juice and black pepper and wrapped in foil.
I have it with salad and new potatoes.0 -
I sometimes poach fish in water & lemon juice. Or bake it in the oven.0

Don't know about Basa Fillet but I love to grill fish. I use a little olive or canola oil, seasoning and wrap in heavy alum foil then place on slow grill so it doesn't dry out. Yum and you can eat it hot or cold. It's all good. Enjoy!0

I create a tin foil pack, add some lemon slices, seal it up and bake in the oven Delicious!!0

Love - Love - Love fish!! I have a super easy recipe for any kind.
Heat oven to 450*
Take a piece of foil (long enough to make an envelope with)
Place filet in center of foil (long ends to the left and right)
Spray with I can't believe its not butter (enough to cover fish completely) and add your favorite seasoning (mine is Lemon and Herb by McCormick)
Bring long sides of foil together and wrap, then seal the ends.
Put on cookie sheet and bake for about 11 mins
It cooks the fish and steams it at the same time - Just be careful opening the "envelope"0 -
Here's my fave recipe - it's good with tilapia or mahi mahi -- not sure about your particular kind but I can't imagine it would be that different!
Spray a glass baking dish with cooking spray.
Lay slices of oranges, lemons and/or limes on the bottom.
Place fish filets on top of the fruit.
Sprinkle with your fave herbs -- we LOVE the Citrus Grill seasoning blend by Durkee.
Drizzle (and I mean DRIZZLE -- just a TOUCH) of extra virgin olive oil over each filet.
Add just a little sprinkle of parmesan to each filet.
Bake on 425 until cooked through and flakes easily. Usually about 15-20 minutes, depending on the thickness of the fish. YUM.0 -
I really like pecan crusted in the fall/winter time.
Set out 3 plates
plate 1: egg and a little water, stirred up
plate 2: flour, a dash of cayanne and s&p
plate 3: finely chopped pecans, a bit of corn meal and onion powder.
Coat the fish in each of those mixtures, in that order. Bake at 425 for about 20 minutes
Or for a lighter dinner...
In a large bag put... (these amounts are for about 4 pieces of fish)
1/4c basil vinegar
1T olive oil
1T (fresh) or 1t (dried) of basil, oregano, thyme, parsley
minced garlic
grated lemon peel
s&p
Marinate fish for at least half an hour
broil for 7-10 minutes or until flakey0 -
Marinate with lemon juice, sea salt, cayanne pepper (to your taste) or sprinkle red chili pepper, garlic powder, and onion powder. Let it sit in frig covered for 15 minutes. Cook in pan using Pam cooking spray with olive oil. Along with it make Uncle Ben's whole grain rice or put into corn tortilla for fish tacos adding your favorite salsa. Just a thought!

If it's a meaty fish, you could try lime fish casserole. Delicious, quick and low fat:
* 1/2 cup lime marmalade
* 2 tablespoons lime juice
* 1 tablespoon brown sugar
* 2 tablespoons salt-reduced soy sauce
* 4 thick fish fillets, cut into 5cm pieces (I normally have 1 fillet for 2 people)
* 1 carrot, thinly sliced into matchsticks
* 2 celery stalks, finely shredded
* 4 spring onions, thinly sliced, plus extra to serve
* egg noodles to serve (or rice noodles)
Combine ingredients (except for noodles). Bake in a heavy casserole dish at 180degC for 20-25 minutes or until fish and veggies are cooked. Serve with noodles and extra spring onions.
