Im just wanting something new and healthy -- my family needs variety and since i cook for me and they reap the benefits i need something new... I could eat the same thing all the time (i kinda do) they need change:) just hoping to find something that i might have everything for... haha... i do have a variety in my freezer of meats and i love casseroles:)

    Tonight I'm having a big bowla wholemeal pasta, with a cabonara sauce made of egg yolks and bacon (if you've never tried egg cabonara, I highly recommend it!!)

    It's weight liftin day so I get extra carbs :) Normally it'd be some kind of veggie and meat stir fry or broiled chicken breast with some cream cheese.

    Flatbread pizza :) You can make pizza out of anything.........tortillas, flat bread, flat out, English muffins. Just toast them on one side, add sauce, cheese, and topping and bake until cheese melts....yummm.

    Tonight's dinner here will be Green Chile. It is simmering in the crockpot as we speak :) The house should smell so good when I get home!!
    I need to pick up some low-cal tortilla's on my way home, make some pinto beans when I get home, and voila...dinner :)

    Here's my meal plan for this week:

    Sunday: French onion and apple soup, chicken caesar salad

    Monday: ham, baked sweet potatoes, fresh pineapple

    Tuesday: Hot german potatoes and bratwurst, waldorf salad

    Wednesday: Fettucine alfredo, grilled chicken breasts, zucchini

    Thursday: OUT

    Friday: hidden rainbow albondigas

    I made a pizza last night on a flatout original light with a little alfredo sauce, chicken, yellow pepper rings and fat free cheese slices. made a nice little salad on the side YUM!

    This is a good one. Make it for my family and they love it.

    Mac and Cheese

    Cooking spray
    1 pound elbow macaroni
    16 oz pureed winter squash or cauliflower
    2 cups 1 percent lowfat milk
    4 ounces extra-sharp Cheddar, grated (about 1 1/3 cups)
    4 ounces Monterrey jack cheese, grated (about 2/3 cup)
    1 teaspoon salt
    1 teaspoon powdered mustard
    2 tablespoons unseasoned bread crumbs
    2 tablespoons grated Parmesan
    1 teaspoon olive oil
    Directions
    Preheat the oven to 375 degrees F. Coat a 9 by 13- inch pan with cooking spray
    Place the frozen squash or cauliflower and milk into a large saucepan and cook over a low heat, stirring occasionally. Turn the heat up to medium and cook until the mixture is almost simmering, stirring occasionally. Remove the pan from heat and stir in the Cheddar, jack cheese, ricotta cheese, salt, mustard. Pour cheese mixture over the macaroni and stir to combine. Transfer the macaroni and cheese to the baking dish.
    Combine bread crumbs, Parmesan cheese and oil in a small bowl. Sprinkle over the top of the macaroni and cheese. Bake for 20-30 minutes until bubbles and then broil for 3 minutes so the top is crisp and nicely browned.

    I agree with this. I like the Cuban Sandwich wraps. I'm having those tonight, but instead of making the pork I just bought Spanish roast pork from the Publix deli.

    Make mashed potatoes
    Place ground beef in baking dish, cover with potatoes, sprikle with breadcrumbs and bake 350 for 20 min until breadcrumbs are browned. Serve gravy on the side.

    Can also be made with Turkey For 1/2 the calories of beef.

  • I'm having Woman's World Magazine: Fat Flush Diet Soup. It's more like chili. It's supposed to help you lose 10 pounds in a week, but that's not why I'm eating it...it's DELISH!! I have to hide it from my husband...it's soooo good!!
    I had it for lunch today already...it's THAT yummy!:happy:

    Ingredients

    2 tsp. olive oil

    1 1/4 lbs. lean ground beef, turkey or shredded chicken

    1 onion, chopped

    2 cloves garlic, chopped

    1 bell pepper, seeded and chopped

    8 oz. mushrooms, chopped

    1 (14 oz) can crushed tomatoes

    1 (32 oz.) bottle reduced-sodium tomato or vegetable cocktail juice

    1 Tbs. fresh lemon juice

    1 (14 oz.) can beans rinsed and drained

    1 Tbs. ground cumin

    1/8 tsp. cayenne, or to taste ***I ADD 1 TBSP OF CHILI POWDER & 1 TSP OF CAYENNE (I LIKES IT SPICY!):tongue:

    1/4 cup each fresh cilantro and parsley, chopped



    Direction

    1.In a stockpot, heat olive oil over medium-high setting. Saute meat/poultry until cooked through, about 5 minutes. Drain ans set aside.
    2.Saute onion, garlic, peppers, and mushrooms until soft, about 5 minutes.
    3.Stir in remaining ingredients, except cilantro and parsley. Cover and simmer for 20 minutes. Stir in cilantro and parsley.
    4.Cover; simmer 10 minutes longer. Store soup in refrigerator up to 5 days. Freezes well and makes 16 cups. One serving is 3 cups.

    Chili (Well, what I call chili)

    1lb of ground turkey, ground chicken or extra lean ground beef
    2 small cans of tomato sauce
    1/2 Onion, diced
    Williams Chili seasoning
    Various other seasonings for me (packet of splenda, minced garlic, little bit of seasoned salt, little more chili powder, etc)

    Brown the meat, add tomato sauce and two cans of water, add seasoning, simmer.

    I figured this up to be right at 175 calories in 1/2 C

    I served this over crunched up whole corn flour tortilla chips, lettuce, and FF French Dressing. MMMMMMMM MMMMMMMM!

    This sounds good! And it's cute with the potatoes on top. I'll try this, my family doesn't like my current meatloaf.

    I found this on the pillsbury site and i have everything so plugged it in and this is what i came up with:)

    Chicken chili crescent bake
    Serves 6 people

    Great Value - Reduced Fat Crescent Rolls, 8 roll
    Foster Farms - 99% Fat Free Boneless & Skinless Chicken Breast Fillets, 16 oz - cubed or shredded
    Great Value (Walmart) - Great Northern Beans -Canned, 1 3/4 cup
    Great Value (Walmart) - Diced Tomatoes & Green Chilies, 10oz can
    Mccormick - Original Taco Seasoning Mix, 4tsp

    DIRECTIONS
    1 In 3-quart saucepan, mix chicken, beans, tomatoes and taco seasoning mix. Heat over medium-high heat, stirring occasionally, until hot. Spoon into ungreased 13x9-inch (3-quart) glass baking dish. 2 Separate dough into 8 triangles; place on top of hot chicken mixture. 3 Bake at 375°F 18 to 25 minutes. .

    Tonight I'm meeting a friend for dinner before class but I made Skinny Taste's Divan Chicken lightened up for tomorrow and the rest of the week. I live by myself so I usually just make one meal and eat it throughout the week. Smells good in the oven right now! Can't wait to try it tomorrow.

    Tonight I am having Pollo in Potacchio. (basically chicken thighs in a red sauce)

    I did cheat and just threw everything into crockpot this morning......taste tested at lunch, and YES! another winner from Skinny Taste :love:
