I was going to make a pumpkin cheesecake; bottom layer regular cheesecake, top layer pumpkin pie filling mixed with cheesecake. Cook time for pumpkun recipe: 40 mins @ 325.

Well, I put in the bottom layer of regular cheesrcake and found that my pumpkin pie filling was bad. So I looked up a chocolate cheesecake recipe and added a layer of that in place of the pumpkin mix. Cook time for choc recipe is 60 minutes @ 300.

So, my question, do I cook at 300 or 325 and for how long?i thought 60 mins at 300 since the choc. Layer is on top, but I'm not sure!

You could really go either way. But I would do the lower temp personally. Less likely to accidentally burn or overcook anything!

You are right. Lower temp for longer.

id go 325 and ceck it at 30. the top layer shouldnt be very thick so it shouldnt take an hour. i do cheesecakes this way w/ regualr cake on the bottom and it takes about 45. good luck....and save me a piece.
  • I vote for lower temp ... longer time. Do you place the cheesecake in a bain marie ?

Cook it at 300 for the 60 minutes but test to see if the bottom is close to being done at 40 minutes. If it is not done, to prevent over cooking the top place a piece of foil over the entire cake and put it back in the oven for the other 20 minutes.

You should be ok. The 25 more degrees in the regular cheese cake makes for less cooking time, but you could just as easily cook the entire cake at either temperature just checking to make sure the top isn't getting over done every 15 to 20 minutes. Leave your oven light on so you can peek in quick.

Did you know you can also cook cheese cakes in the slowcooker to keep them from cracking on top? This method works for recipes other than the one in this link. Aprox the same amout of time.
