summer cottage cheese salad

My mom used to make this every summer, you can vary what vegetables you use, sometimes instead of red onion I will use scallions(or don't use onion at all), I will use red or yellow peppers, celery etc... The nutritional info is based on the ingredients below (5 servings) it is sooooo good! Very refreshing in the Summer, I will usually stuff it in a tomato or eat it plain! You can use as much or as little salt as you want if you are watching sodium...

16 oz Cottage Cheese 2% (I prefer large curd)
1/2 small red onion chopped
1 bell pepper chopped
1 ripe tomato chopped
1/2 to whole cucumber chopped
a couple dashes of Lawry's Seasoned Salt

Combine all ingredients together and refrigerate. enjoy!
