Raisin Cake

1/3 cup raisins
3 tablespoons softened butter
1/3 cup packed brown sugar
1 egg
1/2 teaspoon vanilla extract
1/2 cup all purpose flour
1/4 teaspoon baking powder
1/8 teaspoon salt
1 tablespoon white sugar
1/4 teaspoon ground cinnamon

1. Preheat oven to 325 degrees.
2. Place raisins in bowl. Cover with boiling water and let stand for 5 minutes. Drain, then set aside.
3. Cream the softened butter and brown sugar in a bowl.
4. Add vanilla and egg and beat until blended.
5. Combine flour, baking powder and salt and add to mixture.
6. Stir in raisins.
7. Spray a loaf pan with nonstick cooking spray and pour batter in.
8. Combine sugar and cinnamon and sprinkle over batter.
9. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Serve immediately or allow to cool for 10 minutes. Slice into 8 pieces.
