Recipe ideas needed - sauerkraut and potatoes

So I have sauerkraut, red potatoes, and apples. I want to cook these together in some delicious way (I'm a vegetarian), but have never cooked with sauerkraut before. Are there any hints, tips, or recipes out there?

    I don't know how to make just one dish with all this stuff, but you can peel the apples and cook them in some apple juice (or water) with some sugar (honey, agave) and cinamon and a pinch of salt and make apple sauce.

    I'd slice the potatoes really thing and grill them with onions and bell pepper and some seasoning (salt, pepper, paprkia) and put them in foil over medium for about 45 minutes.

    Just head up the sauerkraut and serve it on the side.

    I know you said you were vegetarian, but just an idea.. My mom makes a pork roast with just sauerkraut, potatoes and carrots.. maybe a little broth. I don't care for sauerkraut but she says it's delicious. The apples would go great in there!

    Oh, I should also say that she cooks it all together in the crock pot or on low in the oven for the afternoon

    my mom used to make a dish with purple cabbage and tart apples (like macs) with vinegar and cloves. we lovingly (and appropriately) call it "Blue Thunder" due to the colour of the cabbage and the after effects of it. :) its more of a side dish.

    I made this dish this weekend and it was excellent.

    1lb sauerkraut
    1 small sweet onion, finely sliced
    1 small/ medium apple, finely sliced- I used a Jonagold
    1-2 tsp sugar (can omit)
    3-4 pc bacon, chopped

    Saute the bacon in a pan until it is crisp, remove the bacon, keep the fat. Add the onion and the apple to the pan, saute, stirring frequently until they are very soft. Remove from heat. Stir in sugar if using. Stir in kraut and bacon. Add salt, pepper, sugar to taste.

    I would serve the potatoes on the side, mashed.

    EDIT: SORRY, I skipped over the part about being vegetarian! Skip the bacon, use butter or a neutral flavored oil.

  • This sounds yummy! I would just put everything in a crock pot (or pre-boil the potatoes). The sauerkraut just needs to be heated up. Maybe add some herbs/spices that you like, but the sauerkraut will be tangy.

    (side note- some sauerkraut is not truly fermented and contains a lot of preservatives. the real fresh fermented is WAY better!)

    Incidentally, I have a container of homemade purple sauerkraut in my fridge. Awesome stuff. Sauerkraut is dead simple to make, and the homemade variety is way better than prepackaged.

    Put sauerkraut, cut potatoes, 1 onion and apples in a pot cover with water and boil for at least a half hour.
