Homemade chewy peanut butter bars

Homemade Chewy Granola Bars
1/2 cup peanut butter or sunbutter
1/3 cup honey
1/4 cup coconut oil (or another oil of your choice)
1/2 cup oats
1/2 cup of cereal of your choice (I use Kashi Go Lean for added protein and crunch)
1 cup total of any combination of: sesame seeds, coconut flakes, sunflower seeds, dried fruit, chocolate chips

Warm peanut butter and oil in a saucepan...add honey.
Mix in the other "stuff". Wait till they cool off a lot to put the chocolate chips in or they'll melt and smear in to it...don't wait too long or it'll be hard to shape them...who cares really, chocolate is chocolate. Be creative, you could use butterscotch chips, rice crispies, cheerios, nutella or even those flavored peanut butters...yum, yum! You could just use 1c of oats for a chewier bar...I like the crunch of Kashi go lean. I try to use all natural ingredients, so they are better for us than store bought bars.

After you have made this a couple of times, you won't need to measure anything. I just warm a bunch of cocnut oil and peanut butter with honey an dthen just mix everything in till it's cookie dough like. Then you can either spread it out and cut when it cools or shape it like a bar with your hands (very messy, but works the best). I liked smooshing them into the mini muffin tins last week...I thought they stayed softer like that. If you shape them or cut into bars, you can put in baggies and then they are portable for a not home in time for lunch snack. They don't need to be refridgerated either! Sometimes, I just leave it in the pot on the stove and we just scoop it onto the plate and eat it with a spoon...it's great warm!

This is my new "go to" snack for us and I take them to almost any function where I need to bring a dish! It's easy and always a hit! We have 4 kids who gobble them up!

Now I have to go make some!!!!!

    Okay, I figured out the ingredients and made a recipe in my food journal for the bars. I hadn't done that yet because I haven't really been tracking my food. I have been doing a (mostly) juice fast for a couple of weeks...I keep falling off the wagon....but anyway...

    This makes a small batch (8)...I would double it. The calories and fat aren't low, (you could reduce the amt of honey and add some splenda) but it's soooooo worth it! It's also healthier and cheaper than store bought bars...and when they are gone, you can just whip up another batch in 10 minutes. I usually shape them like a cliff bar or put in mini muffin tins.
