    I love pumpkin lol. I make homemade pumpkin pie filling. It is sooooooo much tastier than the can stuff, and its really easy, I can mine, so in the middle of july, If I want a pie, bam yummy goodness lol. I can all kinds of things, so let me know if your interested in recipes or have canning wisdom to share :)

    I made the pumpkin pancake recipe, but used pumpkin pie mix since I didn't have plain pumpkin. It was good -- but the pancakes browned faster due to the higher sugar content. I am going to try again, and also try adding pumpkin to my Oatmeal pancake recipe.
    Mixing up that cream cheese today, too!
