Turkey Roll Ups- Prep time 15 min. Cook time 20 min.

Options
Package of Jennie-O Turkey Cutlets
1/4 pound of Prosciutto
Mozzerella Cheese (low fat if you can find it)
Spinach
1.5 cups Chicken Broth
Can of Roasted Diced Tomatoes (drained)
Gallon Plastic Bag
Minced Garlic
Minced Onions
Toothpicks
3 Tbsp Olive Oil

Season turkey cutlets with sage, pepper, salt (if desired), paprika
Placed seasoned turkey cutlets in plastic bag, tenderize with meat beater thingy
Once flatten, place cutlets on surface for assemble- lay out cutlet, place slice or 2 of prosciutto on cutlet, mozzerella slice, and spinach ontop.
Roll cutlet from smallest end, then place toothpicks to secure
Complete with all cutlets

Heat pan, add olive oil, add garlic and onions.
Add cutlet rolls, chicken broth and cover.
Cook on medium heat til done. Cook slowly as you want to insure all meat is cooked completely
Once half way cooked, add diced tomatoes
Cover again...cook til done.

Serve with Couscous or Brown Rice. Was wonderful with Curry Couscous.
Steamed veggies or salad completes the meal nicely.
