Tasty green veggies

Hi everyone! I have been working on losing weight for the past two years now. My eating habits have changed tremendously. The only thing that I seem to have a problem with is eating enough veggies. I have no problem with other healthy snacks and supplements. Any suggestions on green vegetables or any other that gives you plenty of energy? Thanks! :huh:

peas, asparagus and spinach are great greens u can eat a ton of. i also love red and green leaf lettuce and try to eat a salad everyday0

I adore kale, collards and brussel sprouts. Recently I've been making kale chips. You put them on a baking sheet and drizzle a little olive oil and salt, bake at 350 and turn every 10 minutes until crispy. Yummy !0

raw spinach is good ! im not keen on many cooked green veggies but I love raw spinach0

Well this is not a "green" veggie -- I love to take an eggplant and cook it until the skin is all burned up (on the grill or on my gas stove -- got to have it standing "up" as long as possible!) and its very soft; and then remove the insides and mix up with chopped tomato, jalepeno, green onion, cumin powder, salt and pepper. Totally delicious by itself or on on crackers, etc.0

Broccoli Rabe, Broccolini, Spinach, Arugula, Escarole are some of my faves.
Not green, but I also love Spaghetti squash, zucchini and eggplant. Love veggies.0 -

I'm with tiffskog, kale chips are amazing! I put nutritional yeast on them. So good!0

i love broccoli.. raw or baked in the oven with olive oil drizzled on it at 350 degrees for 20 minutes (or until crispy). sprinkle some sea salt and pepper on it and enjoy!!!! yummy0

I keep baby carrotts, tomatoes and sugar snap peas in my fridge at home and at my office. When it comes to cooking, I frequently do steamed broccoli, seared asparagus and sauted squash and zucchini. Salads are an easy way to incorporate lots of veggies, too. I like a salad with romaine lettuce, some fresh spinach, grape tomatoes, diced cucumber, grilled chicken, chopped pecans or walnuts and a raspberry vinaigrette.0

Raw sugar snap peas and broccoli as dippers for hummus. I add spinach to my sandwiches instead or lettuce. Love asparagus. Kale chips are another fav - my daughter and I burn our fingers on the pan eating them as soon as they get out of the oven. We sprinkle sesame seeds on ours.0
