I need a new take on salads. I have severe acid reflux disease and I'm really not supposed to eat lettuce or cucumber because it triggers it. I don't particularly like lettuce, but as for the cucumbers! what a tragedy! I would love to start eating salads again..I am not too big of a seafood fan..I like tuna and shrimp but thats about it..I love all fruits and veggies for the most part...what kind of salads do you eat? What ingredients can I add to make mine better overall? What can I sub for lettuce? What fruits taste good in salads? Any advice would be much appreciated!

I love using spinach instead of lettuce as the base for my salad. I then put some mozzarella cheese chunks, baby tomatoes, and some light balsamic vinegarette with a meat (chicken, tuna, shrimp, or turkey) and sprinkle some herbs.0

Can you eat spinich? A spinich salad with chopped almonds or pecans, a diced apple, and a fruity vinegarette like Raspberry Walnut is really tasty!0

I sometimes us spinach & romaine lettuce w/ dried cranberries, crumbled cheese and ranch dressing (low fat) and ill have a tuna or talipia pattie on the side.0

i personally LOVE romaine lettuce with grilled chicken, black beans, corn, black pepper, and pineapple salsa!! i eat it at least once a week. Apples are really good on salads as well as grapes. A friend of mine does not like lettuce so she uses cottage cheese instead then adds all the toppings

Mixed greens, chopped pears, walnuts, pomegranate (seeded), blue cheese and apple cider/maple syrup/olive oil vinaigrette.
Mixed greens, roasted red peppers, pine nuts, goat cheese with a balsamic vinaigrette

Try incorporating pineapples, mango pieces or even apples for that tangy twang to it. Some raisins would be good too.

There's so many things you can put on salads.
Definately give the spinach a try. I love cuccumber, but you can't have that - boo!
Raisins
Pumpkin seeds
Grape tomatoes
Red onion
Mushrooms
Light Feta or Light marble cheese
Different kinds of oranges
Apple slices
Pineapple
Almonds
Walnuts
Cranberries
Grilled chicken
Grilled tuna
I always use fat free kraft Italian dressing - I've always loved it.

Here is what I do.
I usually use 2 full fillets, boil it for about 7 minutes, shred it into a bowl, then add onions and peppers (you can use what ever you want), any seasoning for taste and an egg to hold together, then flatten it out into a burger shape then fry in olive oil.
And it is not too fishy and taste great!0 -
