peanut sauce ideas/ curry?

Hi all!

I'm looking for some great tasting peanut sauce ideas, that are low calorie/fat. Any ideas for me? I've actually never made a peanut sauce.

Also- I'm looking to spice things up a bit. Any curry recipes you would be willing to share?

Hey! I have two favourites:

Catalina dressing, peanut butter, soy sauce, and chicken broth (seen in this recipe http://www.kraftcanada.com/en/recipes/thai-peanut-chicken-88036.aspx)

Another one is 4 tbsp peanut butter, 4 tsp sesame oil, and a splash of lemon juice.... they are both FANTASTIC over a stir fry!

i've done one thats

1 tbsp hot sauce, siracha or tobasco
3 tbsp soy sauce
1 tbsp brown sugar
1/4 tsp pepper flakes
1 tbsp peanut sauce
1 tsp white wine or rice vinegar

whisk and stir fry or toss with some noodles and veggies
