Greek Gyro Turkey Patties
Greek Gyro Turkey Patties with Lemon-Cucumber Sauce
Ingredients Patties
1 pound ground turkey (maximum 7% fat)
4 scallions, minced
1/4 cup lemon-pepper panko (can substitute plain panko)*
2 teaspoons minced garlic
1 teaspoon onion powder
1 teaspoon dried oregano
1/2 teaspoon paprika
1/2 teaspoon salt
1/8 teaspoon ground allspice
1 teaspoon olive oil
Sauce
1/2 cup peeled, seeded, finely chopped cucumber
1/2 cup fat-free plain Greek-style yogurt
1/4 cup fat-free sour cream
1 tablespoon lemon juice
1/2 teaspoon grated lemon zest
1/8 teaspoon garlic powder
1/8 teaspoon onion powder
1/8 teaspoon salt
Directions
1. Mix turkey, scallions, panko, garlic, onion powder, oregano, paprika, salt, and allspice in a large bowl. Form mixture into 8 small patties. Place patties on a plate, cover with plastic wrap, and refrigerate.
2. In a medium bowl, combine sauce ingredients. If a smooth-textured sauce is preferred, blend ingredients in a mini food processor until desired consistency is achieved. Cover and refrigerate until ready to serve.
3. Heat oil in a large nonstick skillet over medium-high heat. Add turkey patties, reduce the heat to medium, and cook patties 4 to 5 minutes per side, until browned on both sides and no longer pink inside. Serve patties hot with cold cucumber sauce on the side.
*Panko is Japanese-style bread crumbs found near regular dried bread crumbs and/or in the Asian food section of most supermarkets. Because they are so light and extra crunchy, they do not have the clog factor that regular bread crumbs can have.
Tips: For the heartier eaters in your family, form turkey mixture into larger patties before cooking and serve with split pita breads as buns. Uncooked patties can be frozen up to 4 weeks. Thaw before preparing, drain off any melted ice crystals, and pat lightly with paper towels before cooking.
