Low Fat Mashed Potatoes

I was craving mashed potatoes today to go with my turkey meatloaf. I know a lot of people use chicken broth for theirs, but that just doesn't cut it for me! I need that creamy, buttery flavor. So....thought I'd share :smile:

3 medium Yukon Gold potatoes, peeled and diced
4 TBSP fat free half and half
2 TBSP Smart Balance Light spread
salt and pepper to taste

Boil potatoes until tender, drain, and mash all ingredients together.
This makes about 4, 1/2 cup servings.

Nutrition info: 110 calories, 2.5 g fat, 540 mg potassium, 21g carbs, 2.25 g fiber, 3.25 g sugar, 3.5 g protein

    I usually use cauliflower instead of potatoes....it's really good! Same preparation and everything but fewer calories:drinker:

    if you use red potatoes with the skins on and instead of all the other stuff just blend them up with some low sodium broth they are extra good and better for ya!
