pineapple uside-down cupcakes

Sorry if I fooled you into thinking this was a healthy recipe, or a recipe at all.
I want to make pineapple upside-down cupcakes (with cake mix from a box) but I'm not sure how to go about making the brown sugar & pineapple part that goes on the bottom of the pan, or in this case, in the bottom of the individual cupcake holes (lol).

Any ideas? Should I just do it the same way as I would a regular pineapple upside down cake?

BTW, these will be for my boyfriend because I like him :)

    Try using the aluminum cupcake liners instead of the paper ones
  • healthier way to do it is with eggwhites and applesauce... applesauce replaces oil..it all taste the same to me:)

    I have to say, after seeing the one with the cherry in the middle, i bet you could cut a half marishino cherry into a heart shape too - that would be cute!

    Anytime! I'm kinda excited to think about pineapple upside down cupcakes, i love the cake version!! And you know, if we do the cake part (not necessarily for the boy but for us) with subbing out the oil/eggs/whatever, i mean we really are talking a small amount of brown sugar and butter for the topping...could use crushed pineapple to get away with a teaspoon instead of a slice...i think it could be a totally doable treat! YUM! Let us know how they come out!
