Looking for Healthy Crock Pot Recipes....
With 3 kids (cheerleading, ice skating, etc), a full time job, and trying to exercise 3 days a week - Who has time for cooking??? I am looking for some healthy crock pot recipes so that I can prepare at night, start before work, and come home to some healthy dinner. Anyone please!!!

My husband and I did this all the time last winter. Place a turkey breast in the crock pot, rub a packet on onion soup on it. Add a bit of water at the bottom. Pile full with carrots, onions, and potatoes. So simple and delcious. Thanksgiving-ish dinner done when you get home. woohoo!0

We just had this the other night:
INGREDIENTS
- 3 chicken breasts
- 16 oz. tub of salsa
- 1 can of corn, drained
- 1 can of black beans, drained and rinsed
DIRECTIONS
- put corn, beans, and 1/2 cup of the salsa in the bottom of a crock pot
- place chicken on top
- pour rest of salsa over chicken
- cook on low for 7-8 hours or high for 3-4
- serve with tortillas

Lazy Cabbage Roll Casserole
1 green cabbage (about 1.5 lbs)
1 lb lean ground beef (I used sirloin)
1 cup long grain brown rice, uncooked
28 oz can tomato sauce, divided
1 tsp thyme
salt & pepper to taste
This will work in a 4-quart crock pot.
Cut the cabbage in half (then in quarters to cut the core out easily). Cut one half into roughly 1" pieces and break up the layers a bit as you place them in the bottom of the crock pot. If desired, salt the cabbage a bit and toss to mix.
In a mixing bowl, combine the rice, ground beef, about 1 cup of tomato sauce, thyme, salt & pepper. Press into a layer on top of the cabbage in the crock pot.
Cut the remaining half head of cabbage like the first half and salt (if desired), placing it on top of the meat/rice layer.
Top with remaining tomato sauce (try to cover all the cabbage a bit).
Cook on low 8-10 hours.
Makes 4 very generous servings.

You might like a web site and phone ap called All The Cooks dot com. I like this web site becaues you can take 1 or 2 ingredients you have on hand and get recommendations for meal ideas...including Crock Pot recipes. let me know if you like any of them.
Personally...I make a lot of chicken and rice soup (chicken, broth, carrots, celery, onion, and rice plus S&P to taste), I also like to make black bean soup with cumin and service with Scoops and sour cream. You could make different chilli recipes. (white chilli with chicken, corn, potatoes) or red chilli the usual way (beans, hamberger, tomato & spices)0 -

3 chicken breasts
1 can ranch style bean
1 can black beans
1 pack taco seasoning
Layer in crockpot, beans first, & let it cook on low. Once the chicken is cooked, shred the chicken & put in tortillas. I always have to triple the recipe because my family loves it.0 -

I'll work on the assumption that a crock pot is what we Brits call a slow cooker...am I right? If so then I have a great healthy recipe:
Chinese chicken and mushroom
Brown some chicken thigh or leg portions in a pan with a little olive oil and remove. Put the chicken into the slow cooker.
In the pan you just used to brown the chicken, add a sliced onion, two tablespoons of soy sauce, two tablespoons of cornflour and stir. Add approx 150ml of chicken stock, the juice of one or two lemons and button mushrooms.
Add to this a teaspoon of sugar, salt and pepper. Pour the liquid over the chicken in the slow cooker and cook slowly for the day. Serve over noodles or just on a bed of stir fried vegetables.
This is so yum, the meat just falls off the bones, it's really tasty and very low fat.
