    that does sound good! Can you post the recipe?

    I found it in the forums on skinnycrockpot.com


    4 skinless boneless chicken breasts, trimmed of fat
    1 cup applesauce (No Sugar Added)
    1/2 cup water
    small onion, sliced
    1 tablespoon minced garlic
    2 teaspoons apple cider or white vinegar
    pinch of cinnamon
    1/2 teaspoon black pepper
    pinch of red pepper flakes (optional)

    Place all ingredients in a slow cooker. Cover and cook for 3-4 hours on high or 6-7 hours on low.

    venison burgers from the bucks my husband shot last year :o) we live in Marquette, MI - and it snowed ALL day yesterday, so I know the cold and wanting to grill outside... we have a cast iron thing that goes over the stove to cook them on - or when all else fails, good 'ol George Forman ;o)

    three shredded beef tacos, rice, with a protein shake, then a bolthouse farms mango protein smoothie to finish it off. Still need to find another ~300 calories to eat on top of that. Bleh.

    Pasta salad. I have it almost everyday and am not getting sick of it yet.
  • Turkey-Bean Chili Mix

    1 onion, diced
    2 bell peppers, one yellow, one green
    1.5 pounds of ground turkey
    2 14 oz cans of fire roasted tomatoes, undrained
    1 can black beans, partially drained
    1 can of refried beans with lime and chili
    spices (cumin, chili, garlic power, salt, pepper)
    1 lime, juiced

    In a medium-large cast iron pot, sautee onion and bell peppers in 1 T olive oil until soft. Set aside in a bowl.

    In the same pot, cook the turkey until browned. (I use low fat turkey, so I don't drain the pot before adding the next ingredients; adjust according to how much fat you want in your meal.) Add the onions and peppers back to the pot, add the cans of tomatoes, black beans and refried beans and stir until the refried beans heat and "melt" into the mix. Add spices and fresh lime to taste and heat through.

    Add any or all of the following toppings:

    sliced avocado
    shredded cheese
    chopped cilantro
    diced green onion
    sliced jalepenos
    sour cream (or plain Greek yogurt)

    Serve in a bowl, in a tortilla, or as a dip. I serve it in a bowl with a side salad of dark green and red lettuces.

    wow, I think I have a menu for a month now. Thanks everyone for the ideas.
    Hubby and the nine year old left to go deer hunting so me and the 2 younger girls had breakfast for dinner.
    Them : french toast with scrambled eggs and chocolate milk(non fat milk and 1/4 sugar chocolate powder).
    Me: 2 egg omelet with bell peppers, onion, tomato, spinach, and picante sauce I had chocolate milk as well...it was that kind of night! : )
