I just asked my sister this today (she makes them & they are sooooo good)
she said to buy the low fat betty crocker brownie mix & a can of black beans, drain the beans & follow the instructions on the brownie box but do NOT add eggs, water, etc.

1 can (15.5 oz) black beans, drained and rinsed
    4 large eggs
    2 tbsp EVOO
    1 tsp vanilla extract
    1 c sugar substitute
3 tbsp unsweetened dark cocoa powder
    1 tsp baking powder
    ¼ tsp salt
    1.5 oz pecan halves
Heat oven to 350. Coat 8x8” baking pan with Pam.
In food processor, combine beans, eggs, oil, vanilla, sugar, cocoa, baking powder, and salt. Process until smooth.
Scrape the batter into the pan and arrange the nuts in even rows, 6 across and 6 down. Bake for 25-30 minutes, until a toothpick comes out clean. Cut into 36 squares with a nut in the center of each.

I tried these a little while ago. They don't taste like homemade brownies...more like little debbie cosmic brownies. But they're good for a healthier chocolate fix, and they're beyond simple.

    15 oz can black beans
19.5 oz box chocolate brownie mix
Open can of beans, drain and rinse well. Put beans back in the can and fill can with water. Put beans and water in blender until smooth. Mix pureed beans with brownie package mix. DO NOT add eggs or oil. Spray baking dish with Pam. Cook brownies according to package directions. Cool and serve.

Also, if you haven't tried her other recipes, you really should. They're awesome!

Any box of brownie mix and a can of (very well) pureed black beans. DO NOT eat them when they're warm or else you'll be able to taste the black beans, but once they're cool, they're SO good!!!

Yep - Here's the recipe I use. I LOVE these.
    http://www.myfitnesspal.com/blog/accountant_boi/view/black-bean-brownies-103623

I use 90-100% dark chocolate for the chocolate bar, but that makes it REALLY rich - some people prefer to use something a little less intense.

For those saying eww... you should try it! If you blend the batter in a food processor long enough, you can't tell it has beans in it. it's a slightly different texture than normal brownies - a little more cake and less chewy brownie, but still delicious.

Edited to add: I like this recipe b/c it's home-made and pretty "clean" - I try to stay away from boxed mixes b/c of the additives. The recipe's pretty simple to make.

lol it really doesn't sound good
  • I made Rocco Dispirito's black bean brownies and they were disgusting!! It was kind of like eating the red bean filling in mochi (not sure if everyone will know what that is and I don't mean the ice cream :P), but black bean/chocolate/espresso flavor and kind of gelatinous... WEIRD STUFF I TELL YA!

But I will bump just to see if anyone else has had some good ones b/c you can't beat those cals!!!

here's the one I use: (Fed it to a bunch of kids without telling them what was in it... and they all loved it!)

    http://allrecipes.com/Recipe/black-bean-brownies/detail.aspx
1 (15.5 ounce) can black beans, rinsed and drained
    3 eggs
    3 tablespoons vegetable oil
    1/4 cup cocoa powder
    1 pinch salt
    1 teaspoon vanilla extract
    3/4 cup white sugar
    1 teaspoon instant coffee (optional)
1/2 cup milk chocolate chips (optional)

    Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8 square baking dish.
Combine eggs, oil, cocoa powder, salt, vanilla extract, sugar, and instant coffee in a blender; blend until smooth; add black beans and blend until smooth. Pour the mixture into the prepared baking dish. Sprinkle the chocolate chips over the top of the mixture.
Bake in the preheated oven until the top is dry and the edges start to pull away from the sides of the pan, about 30 minutes.

Have also made it with the one person's suggestion of adding baking soda - it makes it more fluffy like cake rather than fudgey brownie like.

Take a can of beans, and rinse them until all the gunk is off of them. They grind them up ( fork, food processor, or blender: It makes it not noticeable) then get a box of brownie mix and add in the beans. Do not add water, eggs, or oil. Then bake as directed on the box. They are amazing!

Black-Bean Brownies (Phase 1 South Beach))
Makes 21 servings (each serving is three 1" squares) (I prefer to make them as muffins)
    Ingredients
1 can black beans rinsed well
4 eggs or 1 Cup egg substitute or a combination
sugar substitute equal to 1 C. sugar
    2 tablespoons extra-virgin olive oil
    3 tablespoons unsweetened cocoa
    1 teaspoon vanilla
    1 teaspoon baking powder
Chopped nuts (optional) (I like to add some almond extract and top each muffin with an almond)
    Instructions
Spray an 8" x 8" brownie pan with nonstick cooking spray. Blend all ingredients (except nuts) in a blender (not a mixer) until smooth. Transfer the batter into a mixing bowl and fold in nuts (if desired). Then, pour the batter into the prepared brownie pan. (or muffin cups) Bake at 350oF for approx 30 minutes, until set in middle. Enjoy!

http://allrecipes.com/recipe/black-bean-brownies/ These are great, I didn't put the chocolate chips in to save on calories but I did add in some baking powder (as some comments suggested) to create a more cake like texture.
