Gluten Free Recipes

Hi guys, I have been doing some gluten free cooking, but want to get more into gluten free baking, particularly with brown rice flour. My question is, does anyone have any good recipes for brown rice flour? Thanks in advance.

    I bake frequently, and I just use the Bob's Red Mill GF all purpose flour. My kids love all the things I bake with it!

    My grandma's friend has been experimenting with GF and she has made some AWESOME baked sweets (better than I've gotten from stores, even). I don't have any exact recipes, but she has told me that there are some good ingredients to use (in small quantities) for GF baking. These are olive oil, sour cream, and (most importantly) xanthan gum (not all at the same time, just as various strategies to get your item to have a decent final texture). For cookies and stuff, a little bit of peanut butter also goes a long way in getting it to bind better.

    My advice would be don't use just one kind of flour. One of the oddities about gluten-free flours is that they have different densities and consistencies than regular flour. Using just one can tend to give you inconsistent results and leave your baked good with odd flavors. I use a blend of white rice, brown rice, sweet rice, cornstarch and potato starch when I bake.
