Hi, I'm Zara. I've just made my lovely spicy chick pea and lentil soup... Its delicious, very filling, great for these cold nights and very cheap per serving... Ill give you the nutritional information after the recipe.
10g cumin seeds.
380g white onion.
1 Tablespoon Schwartz chilli flakes.
265g Great Scot split red lentils.
3 Knorr chicken stock pots.
960g canned chick peas. (4 cans)
2000g Chopped tomatoes. (5 cans)
2 tablespoons olive oil.
Method:
1. Grab a BIG pan!
2. Put the cumin seeds and dried chilli flakes into the pan and lightly toast. Creates a strong smell.
3. Add in the chopped onion, stock pots and olive oil, fry until softened.
4. Add lentils and a little water and put the lid on and let it simmer for 5 mins.
5. Add the chopped tomatoes and put the lid on again, let it simmer for a good ten mins. Adjust heat and add more dried or fresh chilli if you wish.
6. Blitz it in the pan but leave it chunky.
7. Add chick peas, cover and simmer until everything is cooked through!
That's It, easy... really tasty too. Expect 10 portions of soup from this batch! I've also decreased the chick peas and added brown mini pasts shells with the chick peas at the end, that's very nice too. This will keep you full from lunch time until dinner time!
