cauliflower cheese
Hi
Did anyone watch the hairy bikers make their cauliflower cheese last night? It looked awsome. Trouble is they used full fat milk, double cream and gruyere cheese in the making of it. I would love to make a low fat version. Does anyone know what I should substitute the double cream and the guyere cheese with? Obviously I would use skimmed milk instead of full fat.

my mum makes her cheese sauce with butter (or low fat marge), milk (semi-skimmed!), flour and cheese (just the lowest fat cheddar I can find) and it is amazing0

Low fat creme fraiche maybe or weight watchers low fat double cream0

Cauliflower cheese can be a good dinner. Make a white sauce with flour and skim milk, add tasty cheese (more taste for the calories). We like our CC topped with pumpkin seeds to add a bit of crunch and a sprinkling more cheese.0

I put a dollop (such a good word) of dijon mustard in my cheese sauce... It tastes radical and it makes the sauce look more cheesy because of the colour. YUM!0

Leave the cream out 1oz butter/low fat sub 1oz flour mix over heat and add a pint of warmed milk use semi skimmed then add low fat cheese or you could use full fat cheese but make / have a small portion (all things in moderation ) :bigsmile:0

you could probably use a little mustard powder, parmesan cheese, herbs, tofu or fromage frais for the sauce - a little Parmesan for the flavour, maybe a little low fat cheese for the consistancy? Cottage cheese perhaps?0

1/2 tsp dry mustard poweder! works wonders in cheese sauce0

I always put lite cream cheese, a little parmesan cheese and low fat edam cheese in mine and some mustard as well. The cream cheese, Parmesan & mustard give flavour without the high cal's of full fat cheese and cream. YUM YUM I so want some now!!0

i definitely vote for adding nutitional yeast and maybe vegan or light cream cheese. mmm!0
