Hi Y'all! What's on your plates tonight??
On mine is:
Tuna Casserole
1 can tuna, in water
1 cup macaroni, uncooked
1 onion, chopped
1 can peas
1 can 98% FF cream of mushroom soup (I use 2 cans because hubby like it more creamy - I factor in the NI)
1 cup skim milk
6 Tbsp reduced fat cheddar, shredded (I used the fiesta or mozzarella most of the time)
Stir together the macaroni, tuna, onion, peas, soup and milk. I also add other seasonings to taste at this time: black pepper, garlic powder, seasoned salt). Pour into a casserole dish (I use an 8 x 8). Sprinkle cheese on top. Cover and bake at 350 degrees for 1 hour to an hour. Remove cover and bake for an additional 5-15 minutes.
NI Per Serving: 333cals 49carbs 6fat 20protein 5fiber

Chicken stir-fry for us for dinner tonight! Boneless, skinless chicken breasts, lots of fresh veggies... My hubby is an absolute master with the spices, so he offered to do most of the cooking. mmmm... can't wait!0

Does anyone know if you can find whole wheat french bread? Here is a recipe for you,, I make it every once in a while and I'm thinking of making it tonight with my turkey meat. (unless someone else gives me a better idea)
1 loaf of french bread
Cut top off and set aside, pick out peices of bread and put in a bowl and set aside ( til its a hollow shell)
Green peppers and Onions chopped and cooked with ground turkey
Drain browned meat with onions and peppers and add 1 can cream of mushroom (i use lowfat)
1 can of skim/lowfat milk.
Slowly add in bread crumbs.
Fill the bread shell with this mixture.
Sprinkle with Lowfat Mozzerela cheese (or velveeta if your calories allow)
Put top on.
Cover with foil and bake on 350 for 30-45 minutes until cheese is melted and it's heated through. Then uncover and bake for about another 5.
yyummy dipped in pizza sauce or just plain.
Add a salad or veggie and Viola! Very very yummy. Sorry I haven't put this in the calorie counter yet0 -
Woops, the nutritional info for theTuna Casserole includes the 2 cans of soup!! It's not that much, obviously, if you just use the one can.
Sporter, i haven't seen wheat french bread, but sounds interesting! And that recipe sounds very GOOD!!! Please let me know how it turned out!

I'll be trying this new recipe. It's from vegkitchen.com. I'll add some steamed veggies and perhaps a salad.
BULGUR AND SWEET POTATO PILAF
Serves: 3 to 4
2 1/4 cups water
1 vegetable bouillon cube
1 tablespoon sesame oil
1 stalk celery, finely chopped
2 medium sweet potatoes, finely diced
3 to 4 cloves garlic, chopped
1 cup bulgur wheat, rinsed and drained
1 teaspoon ground sage
1/4 cup thinly sliced dried apricots
1/2 teaspoon ground turmeric
1/2 teaspoon toasted walnuts
Bring the water to a boil in a small pot and add the bouillon cube, which will begin to dissolve. Reduce the heat to very low to keep warm.
Heat the oil in a large skillet over medium heat. Add the celery, sweet potatoes, and garlic, and sauté for 3 to 4 minutes. Add the bulgur and sage, stir a minute, then add the apricots and turmeric. Mix well and carefully add the bouillon liquid (it will sizzle and splatter). Cover immediately, reduce the heat to low, and simmer for 10 minutes or until all of the liquid is absorbed.0 -
1 cup vegetable soup
3 egg whites scrambled with a piece of turkey and 1 1/2 cups broccoli + a bit of soy sauce.
Mmmmmmmmm. A little high in sodium, but that hasn't hurt me yet!0 -
Whole wheat French bread is definitely available where I live. So it's worth checking for in your area.
Tonight I'm on my own for dinner. So I'm planning to bake the steelhead trout fillet that I picked up yesterday. I'll probably keep it simple with some shallots, herbs, and a spritz of olive oil. And I have some Yukon Gold's left from a meal I made this weekend, so I'll probably bake one of those up to go with it. Oh, and I think I have a zucchini left also. Maybe I'll have a few strawberries too.0 -

Grilled chicken, fat-free mozzerella, baby spinach, mushrooms, sprinkled with a little garlic and italian herbs with some reduced fat ranch dressing, all wrapped up in a whole grain wrap! I can't wait0
