Cheesecake Stuffed Strawberries... 79 calories!

I have made these twice now, and they are so good!!! I love sweets... and I especially love cheesecake, and this is almost better than cheesecake!

1- 8 0z pkg fat free cream cheese
3 TB powdered sugar
1 TB brown sugar
1 tsp vanilla
1/2 tsp lemon juice
1/4 c. graham cracker crumbs
16 large strawberries

Cut tops off of strawberries, and then hollow out the strawberry enough so that you can stuff it.
Mix all other ingredients except graham cracker crumbs.
Put mixture into zip lock bag, cut corner off, and squeeze mixture into strawberries.
Dip top of strawberry and mixture into graham cracker crumbs.
Chill for 2 hours.

Serving- 2 strawberries

    Do we mix all the ingredients together? Do we core the strawberry and fill up the middle or do we slice them in half and put the mixture on top. Just not quite sure on the presentation they sound great

    You could use shortbread cookies/biscuits. Or, just Google graham crackers. I'm familiar with a lot of British biscuits, but I'm not sure what you have in Australia.

    The jury is out on the correct biscuit to use for cheesecake bases in this country. My mum and I swear by Arnott's Shredded Wheatmeal or Granita biscuits, but some heathens use Nice biscuits.

    I am going to try a couple variations of ths recipe next time I make them. For one batch, I am going to mash up banana with the filling and dip them in crushed vanilla wafers, and for the other I am going to dip them in crushed oreos and drizzle chocolate on them... yummy!
