Here's my secret weapon!! Luan's red pepper and tomato soup

Right here's my special soup I am addicted too are you ready??? I

It will make 10 servings I freeze it and use it when ever I want. its about 45-50cals per bowl x

3 red peppers
1 yellow pepper
1 red chilli (optional)
3 or 4 tins of chopped tomatoes
1 garlic clove
1 large onion
whole pack of celery
1 knorr chicken stock cube
1 knorr veg stock cube
5 tsb lea and perrins
3/4 pint of boiling water
black pepper
(dont add salt the stock cubes are salty enough)
1 tsb sugar
2 tbsp tomato puree
Balsamic vinegar
fry light 2 sprays

Ready??

Chop peppers and onions and celery garlic and put on a baking tray.
Spray with fry light and add balsamic and stir.
Put in hot oven till veg are soft and caramalised.

Mean while put chopped tomatos in a large pan and add the black pepper and tomato puree.
melt the stock cubes in the boiling water and add to the pan and simmer for 3 mins.

Add the softened baked veg to the pan and the lea and perrins and simmer for 3 mins.
Blitz with the hand blender.

I also add a spoon of carrabian hot pepper sauce or pesto to make it extra yummy.

This is my favorate soup to enjoy on a cold day and I snack on it as and when. Its full of great flavour and extremely good for you. I swear it has helped me to lose weight over the years and I never tire of eating it.

    Hand blenders are cheap in the supermarket and easier you just blitz it in the pan. You will love it.
    It also makes great pasta sauce.
    I have made it and put turkey meatballs in it.

    mmmm i love soup for lunchtimes, will definitely try this one this weekend. i'm currently guzzling my way through a batch of homemade butternut squash and chilli soup :)

    I put it in the recipe thing earlier today and it came out as that. It in all fairness does make more than 10 servings and I think i logged it as 12. I will check it out again. It is still the most delicious soup ever and does me no damage.

    Just checked it out and its for 12 servings at 44 cals. I hope it doesnt put weight on anyone lol. I doubt it :O)

    Tesco Value - Chopped Tomatoes, 300 g 51 cals

    Peppers - Sweet, yellow, raw, 1 pepper, large (3-3/4" long, 3" dia) 50 cals

    Onions - Raw, 2 cup, chopped 134 cals

    Celery - Raw, 2 cup chopped 28 cals

    Generic - Garlic, 1 Tbsp (4g) 10 cals

    Lea & Perrins - the Original Worchestershire Sauce, 5 tsp. cals

    Shaw's - Balsamic Vinegar of Modena, 3 tbsp 30 cals

    Knorr - Chicken Stock Cube, 25% Less Salt, 1 Cube 39 cals

    Knorr - Vegetable Stock Cube Less Salt, 1 Cube 38 cals

    Very Lazy - Red Chillies, 10 g 5 cals

    Tesco - Tomato Puree- Double Concentrated, 1 tablespoon 14 cals

    Peppers - Sweet, red, raw, 2 cup, chopped 77 cals

    Giant - Fine Sugar, 1 Teaspoon 20 cals

    Fry Light - Extra Virgin Olive Oil Spray, 4 sprays 10" pan 4 cals

    Total: 525 cals
    Per Serving: 44 cals (12)

    I hope this helps.

    Oh and I did say the pesto was optional.......

    You haven't entered the full amounts for the tomatoes, red peppers and tomato puree. I make that an extra 250 calories for the whole pot if you use 3 tins of tomatoes.
