I make crustless quiche (for my primal/low carb diet), because I HATE cooking for breakfast/brunch. I make it in a 9 inch pan, cut into 6 wedges, and warm one up in the morning (45-60 sec). You can make them with whatever ingredients fit your eating plan.

Oatmeal (1 minute 40 seconds in the microwave) with blanched almonds & maybe tart cherries? Eat it while you're curling your hair. Quick & easy. Be sure to eat though!!!! :)

I also make oatmeal in the microwave in the morning and top it with fresh fruit. I put it in a paper bowl so I can eat it in the car. When I run out of oatmeal I eat dry cereal (Kashi), a piece of fruit, and greek yogurt in the car. :)

Kellogg's has expanded their fiber waffle line to include chocolate chip.
I throw them in my toaster over, spread a little bit of peanut butter on them, and eat them bare handed. (no fork or knife required)

Amen to the paper bowl. I also make scrambled eggs in the microwave in a paper bowl. I hate cleaning the dishes later!! :O)
  • Breakfast has always been a struggle for me! I get up way too late and only leave myself 5mins to eat something lol

The only thing I have managed to stick to is having a diet shake every morning. I know a lot of people get sick of having them every day so it might not be an option for you. If I don't have any shakes I will usually have a tub of yoghurt or something I can eat fast.

I spray a pan with olive oil and crack an egg on it. It cooks in the same amount of time it takes to make a piece of toast. I put the egg on the toast and enjoy!

Other days I slice an apple and spread 2 tablespoons of peanut butter on it.
