Shepherds Pie made with Turkey...

3 large potatoes, peeled
2 tablespoons butter
1/4 cup milk
1 tablespoon olive oil
1 onion, chopped
1 pound ground turkey
1 large carrot, shredded
1 (4.5 ounce) can sliced mushrooms
1 tablespoon chopped fresh parsley
1/4 teaspoon dried thyme
1 clove garlic, minced
1 teaspoon chicken bouillon powder
1 tablespoon all-purpose flour
salt to taste
ground black pepper to taste


Calories: 203 | Total Fat: 7.7g | Cholesterol: 43mg

    PUMPKIN CHEESECAKE

    Cooking spray
    1/2 cup graham cracker crumbs (about 4 cookie sheets)
    1/4 cup granulated sugar
    1/4 cup packed brown sugar
    1 (8-ounce) block 1/3-less-fat cream cheese
    1/2 cup canned pumpkin
    1 tablespoon all-purpose flour
    1/4 teaspoon ground cinnamon
    1/4 teaspoon ground ginger
    1/4 teaspoon salt
    1/4 teaspoon ground nutmeg
    3/4 teaspoon vanilla extract
    1 large egg
    Preparation

    Preheat oven to 325°.
    Coat a pan with cooking spray, and sprinkle pan evenly with crumbs.
    Combine sugars and cream cheeses in a large bowl; beat with a mixer at medium speed until smooth. Add other ingredients and mix well.
    Pour cheese mixture into prepared pan. Bake at 325° for 35 minutes or until center is just set. Turn oven off, and partially open oven door. Cool cheesecake in oven 1 hour.
    Remove cheesecake from oven, and cover. Chill at least 8 hours or overnight.

    164 cals per slice........8 slices total

    I'm a pretty simple cook, but if you want a good source of lean protein:

    Turkey Chili

    one lb ground tukey
    1 can of Red Beans
    1 Can of diced tomatos or Tomato Paste
    One chopped onion
    1 store bought Chili packet or season to own taste

    Usually, 1 full cup of this chili has about 350 calories, is low in fat and carbs, and filling.

    ive just created an amazing low cal dessert, is super simple to make too!

    all you need is:
    Large Wine Glasses / small Bowls
    1 -2 Sachet sugar free jelly
    4 sponge / trifle fingers
    fresh raspberries
    1 pot Shape / Danone white chocolate delight

    how to make:
    break up sponge fingers
    layer sponge / fruit
    pour over jelly
    leave to set.
    top with pudding and decorate with more fruit

    (you need approx 1 pint jelly, i like to make with half amount water as it sets better so i use 2 packs, if you use full amt water only 1 sachet needed). there are loads of variations you can do on this, i have made raspberry and white chocolate this time, but any flavour jelly / fruit is good, and you can use any s/f yogurt / pudding mix etc for topping :smile:

    nutrition as I have made it:
    2 servings. cals 179 / carbs 35 / fat 2 / protein 4 / sugar 15 / fibre 3
