I have some Mahi Mahi filets I wanted to try and need a good way to cook it--Husband actually wanted to try it and he hates seafood.:noway: ANy good Ideas out there, anything would be appreciated.0

Not to gross you out or anything I told my co worker the other day about that fish I tried it once, they said it is fish bowel. Im never eating that again:laugh:0

I just made that tonight! I put salt, pepper and I rubbed it with ground ginger, then grilled it on my George Forman.

I don't know where they got that info from but...Mahimahi is a Hawaiian word that means "strong-strong" for dolphin fish. This species is found in tropical and subtropical waters throughout the world. It's a white fish and holds up well, grilled, fried or baked. I use it for fish tacos. Maybe your hubby will like them. I use Tumaros whole grain low carb tortillas and cole slaw mix (raw, no sauce or anything). Grill the fish with just some salt, pepper, olive oil (so it doesn't stick to the grill). If you want you can add some Emerils Essence (recipe follows). This adds some BAM to it..LOL Then mix the essence or taco seasoning to some light sour cream for the sauce. To build: Add a strip or 2 of the fish, some cole slaw mix, a tsp. of the sauce and a squeeze of lime juice. Yummy! I like it alot.
This makes alot, just store the extra in a container and use it on other meats.
Essence:
2 ½ tablespoons paprika
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon chipotle pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
½ teaspoon salt
***I decreased the salt...I try to stay low sodium

Thanks for the help, I wish I had a george forman grill, it would be really helpful especially now that I don't have a real grill any more, :grumble: I ended up pan frying with a little olive oil and the emeril spices, what I had anyway--so good! Okay. Mahi is my all time favorite!
Here's a yummy variation:
Grill or pan fry it with the spices, just like you did. Then serve it with some fresh fruit salsa from the produce section of the grocery store. yum!
Also - mix a little of the spice mix with some low fat mayo. More or less, depending on how spicy you like it! Put that on your tacos or just drizzle it over the cooked fish.

Another idea: I know it's a little higher in fat (good ones though), but maybe crusting it with some Macadamia nuts...living in Hawaii, they are so abundant here!
Topped with Mango/peach salsa is awesome too....they sell it at Costco. It's called Santa Barbara Mango Peach salsa. It adds a sweet tropical taste.

I bought some frozen Mahi Mahi filets from Costco and made up a real simple but delicious recipe (even my picky-husband loved it). It's not completly fat-free but I was careful not to use any oil whatsoever and still kept it crispy and flavorful. You can even use the toaster oven when cooking for 2 or 3!
Easy Schmeasy: marinate the thawed (or fresh) filets in Lite coconut milk then bread each filet with a mixture of Japanese Panko breading and unsweetened shredded coconut, line a cookie sheet with foil, spray the foil with PAM, place the breaded fishies on there, spray the tops with PAM, bake at 375 degrees until just done (doesn't take long, check consistency after about 10 min) and Voila! Sea-salt to taste and if you have saved up your calories (and ONLY if you have saved up your calories), add a smidgen of Thai peanut sauce... Yummeroo!0 -

your co-worker is incorrect. mahi-mahi is the filets (the muscles) of the dolphin fish (not a dolphin, just a fish that has that name)
tilapia has been looked down upon because it is a bottom feeder, like catfish, but it is also the muscles of that fish that are eaten. all fish that are sold for food are stripped of their innards.0 -
Icandoallthings: That recipe sounds good...I didn't know you can bake it and get the same results as pan frying. I will definitely try that out...maybe adding some finely chopped macadamia nuts to the crust...you know I like them nuts! Thanks for the great idea!0

That way, you can bake pretty much anything and spray with PAM instead of lathering on the dreaded oil. I've Panko-breaded zucchini and onions, sprayed with PAM and baked'm. So good and so guiltless! Although I have to remember my "portion control"!0

We eat a high fish diet and Mahi Mahi is really Dolphin. Soak it in lime juice and salt so it absorbed the lime. You can then fry it with lightly dusted seasoned flour. You can bake it layered with slit almonds. I personally prefer stuffing Jamaican jerk seasoning in between the cuts then grilling it on the george foreman grill.0

it is okay to spray pam on your food. there are sprays out there that taste better, though.
and the "olive oil in a spray bottle" is so that you use less of it.

I make a marinade of fresh lemon or lime, salt, pepper, garlic powder,and a little oil. you only need to marinate the fish for a few minutes, then grill it on the grill or the George Foreman. Be sure to spray your grill wih Pam so it doesn't stick! Serve with Salsa!0

I made this tonight - Mmmm Mmmm
Very, very simple but so good! See recipe below.
What I substituted:
I used the BestFoods Mayo w/olive oil. I also used shredded Parmesan cheese instead of grated
and used a mixture of 1/2 Italian Bread Crumbs and 1/2 Panko breading (love Panko! less calories!).
Sprayed the top with Pam and used my sea salt grinder to salt the top.
I enjoyed this recipe with 1 small baked red potato, 1/2 C steamed spinach (w/ a mist of olive oil) and
a small sourdough dinner roll (with 0 calorie butter spray).
And STILL was within my daily calorie limit. :happy:

Herbed Mahi Mahi
This herb-seasoned mahi mahi is a tender and flavorful fish dish with a simple coating of bread crumbs. Serve this herbed mahi mahi recipe with several green vegetables and rice. You can substitute flounder, halibut, red snapper, or almost any other fish, if you prefer.
Preparation time: 10 to 15 minutes
Cooking time: 20 to 25 minutes
Yield: 4 servings
1 lemon
2 cloves garlic
1/2 cup fat-free or lowfat mayonnaise
1/4 cup fat-free Parmesan topping or grated Parmesan cheese
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 cup herbed bread crumbs
4 4-ounce mahi mahi fillets
Freshly ground black pepper
2 tablespoons chopped fresh parsley
1. Preheat the oven to 350 degrees F.
2. Juice the lemon.
3. Peel and mince the garlic.
4. In a small bowl, place 1 tablespoon lemon juice, the garlic, mayonnaise,
Parmesan cheese, basil, and oregano.
5. Mix well.
6. Place the bread crumbs on a flat plate.
7. With your hands, rub both sides of the fish with the mayonnaise mixture.
8. Coat each fillet with the bread crumbs on the plate.
9. Place the fillets in a 13-x-9-inch baking dish.
10. Season with pepper to taste.
11. Bake for 20 to 25 minutes or until the fish is opaque in the center.
12. Sprinkle with the parsley and serve.
