delicious garlicky "roasted" butternut squash

I made this last night from a recipe I found online. Of course I altered it 3:) Here it is:
I large butternut squash peeled and cut into cubes
4 cloves of garlic minced
2tbls Annies garlic olive oil (this is what I used. You can use whatever olive or grapeseed oil you have on hand)
1 tbls parsley
pepper (lots, as much as you like)
toss to mix then put in to a 9X13 glass dish lightly sprayed with olive oil (I didn't want to risk sticking but you could probably skip the spray).
cook at 400 degrees "stirring" every 15 min for 45-55min.
This is really really fantastic! I served it with fish, but it would be great as a main dish with barley and pecans.
