very easy: chicken muffins
The purpose is a course (every kind) hightly proteic and low carbs. Good carbs, which are oats (I used the old fashioned kind) and sesame seeds. That's a different & fun way to eat chicken breast, something that I no longer eat the common grilled way, which reminds me of ALL the sad diets I gave up in past years 
NB: I was inspired by Julie's blog , but I modified the recipe (strongly simplified!)

ingredients
- 200 gr chicken breast for 3 big muffins/4 normal size
- 2 full tbs of old fashioned oat
- 1 egg white
- 2 tbs sesame seeds (optional)
- a bit of salt
- rosemary + parsley
- 1/2 tbs olive oil (optional).
directions
Put the chicken breast cut in pieces into the food processor with the rosemary, the parsley and a pinch of salt. Maybe two. depending on your preferences
Then add the egg whites and the oats. blend again. The result is pretty soft, but it's ok. (*)
put some sesame seed on the top.
Before putting the minced meat into muffin moulds, oil 'em using kitchen paper.
Put the moulds in the oven ( 220 degree C/ 430 F) for 20 min. 15 if you pre heat.
(*)If you're less strict than me, add some olive oil, not more than half tablespoon to avoid a result too soft. Oil-free, they're delicious anyway!

it was my lunch today, and i ate just a half , cus my mom stole the others! it's always the same.. i prepare diet foods which are delicious and appealing...then and i eat even less than planned cus my family steal 'em!0
