Black Bean Brownies

1 - 15.5ounce can of black beans, not drained
1 - 19.8ounce box of sugar free brownie mix.
Spray a 13x9 inch brownie pan. Pour black beans and their juice into a food processor and puree until smooth. You can also use a blender or just mash them really good with a hand masher. Put the brownie mix in a medium sized bowl, and then pour the bean mixture into the dry mix. Do not add anything else. Mix until blended, about 50 strokes. Place mixture into pan. Bake according to package instructions. Cut into 24 pieces.
Per brownie: 63 calories
15 carbs
1 gram fat
For variety you can add 1 TBS instant coffee and a tsp cinnamon. Excellent!

These brownies are good and fudgy. I don't recommend them for anyone who likes cakey brownies.
I make these often for my husband and son. They love them! I hope they never learn my secret or they'll stop eating them.0 -

Does using the "juice" from the canned beans make it creamier? I've seen recipes where they tell you to drain the beans, and replace the juice with water. I didn't know if there was a major flavor change or not.....?0

There is no flavor change... just very fudgey brownies. No one will ever be able to tell that there are black beans in those treats! And don't tell them because they won't try them... ! Yum!0

3 tablespoons vegetable oil
1/4 cup cocoa powder
1 pinch salt
1 teaspoon vanilla extract
3/4 cup white sugar
1 teaspoon instant coffee (optional)
1/2 cup milk chocolate chips (optional)
Directions
Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8 square baking dish.
Combine the black beans, eggs, oil, cocoa powder, salt, vanilla extract, sugar, and instant coffee in a blender; blend until smooth; pour the mixture into the prepared baking dish. Sprinkle the chocolate chips over the top of the mixture.
Bake in the preheated oven until the top is dry and the edges start to pull away from the sides of the pan, about 30 minutes.

I saw a recipe that says to add egg whites also. I make them with just the beans and they are terrific. I sprinkled a teeny tiny bit of powdered sugar on them before I serve them. The powdered sugar will melt so only add it right before you serve.0

I have always heard of using beans in chocolate cakes and sweet treats as a way to get some of the healthy stuff into the kids meals, but never tried it. Definitely I have to give it a go. I prefer the home made version though. You never know for sure what has been mixed in pre-made stuff.0
