Watergate salad. People always ask me to bring this.

    Ingredients:
    1 box pistachio instant pudding
1 can pineapple chunks in juice
1 large (or 2 small) can mandarin oranges
    1 tub cool whip
About a cup of mini marshmallows
About a 1/3 cup chopped pecans

Dump the pudding mix in a bowl and add the pineapple with the juice, stir until mixed well.
Add the pecans, cool whip and marshmallows and stir again until all mixed together.
Drain the oranges and mix them in very gently.
Chill in the fridge for awhile before serving.

Black Bean, Avocado, Cucumber and Tomato Salad :]
  • I like fresh spinach with strawberries and mandarin oranges with a rasberry vinagarette. You can even put sliced almonds and/or dried cranberries for crunch.

Over dark greens, add roasted/chopped butternut squash and roasted mushrooms after they have cooled with feta and cranberries (either dried or fresh). It's fallish and pretty!

Last year I just threw some stuff together that ended up being fantastic. Mixed greens, honey crisp apple, granny smith apple, cucumber, dried cranberries, feta cheese, and candied pecans.

    7-Up Jello Salad

    1 3oz pack of lime jell-o
    1 cup boiling water
    1 cup 7-Up
1 small package cream cheese (like the square block, NOT rectangle)
    1 tsp sugar
    1/2 cup chopped pecans
    1 small can crushed pineapple

-Combine jell-o and sugar in a shallow dish (can be pyrex, whatever) with boiling water, stirring until dissolved
-Add cream cheese, stirring until smooth
    -Add rest of ingredients
    -Chill until firm

It looks absolutely weird...but all those flavors together...are HEAVENLY!

    Of course... here it is!

Walnut, pear and pomegranate salad with stilton cheese

1 small shallot, peeled and finely chopped (if you dont have shallots just grate some onion it will do)
    1/4 cup of cider vinegar
2 tbsp of maple syrup (I have used table syrup in the past and it worked fine as well)
    1/2 tsp dijon mustard
    1/4 tsp salt
    freshly ground pepper to taste
1/2 cup of olive oil (I have reduced this and still had a great vinaigrette)

    10 cups of mixed greens
3 ripe pears, cored and cut into sections (I have used apples as well)
1/2 cup of stilton cheese (or blue cheese)
    seeds of 1 pomegranate
    1 cup of walnuts, toasted

It's very, very good.... will most likely become one of your favorites if you try it!

    Enjoy!
