Yotam Ottlenghi's The New Vegetarian column for the Guardian (although updates have been VERY sporadic lately)
Smiten Kitchen is not exclusively vegetarian but it's pretty unusual to see meat on there.

I'm a big fan of Vegan Yum Yum. I haven't cooked much from the website, but the cookbook is great because there is a photo of every recipe.

(I'm not a vegan, just an omnivore who is trying to reduce the amount of animal products in my life.)
