Pesto wonton mini-quiches
Wonton wrappers are my new obsession - I just made this recipe for breakfast. I added the brands for accurate nutritional info 
8 wonton wrappers (Nasoya)
1/2 Tbsp pesto (Buitoni)
1 egg
1 egg white
1/2 cup shredded zucchini
1/2 chopped tomato
1/4 cup finely chopped scallions
Preheat oven to 350F. Beat the pesto into the eggs, then mix in veggies. Coat 8 cups of a muffin pan with spray and press wonton wrappers into cups, then put mixture in. Bake for 25 minutes.
Calories-266, Fat-7g, Sat Fat - 1g, Carbs-30g, Protein-17g (of course, that doesn't include the cooking spray, since the label doesn't give accurate info. 1/4 second spray... pfff!)
