Seeking none meat recipe ideas?

Okay so here lately I have just not been wanting meat..I'll pick at it or pull the meat out and eat the rest but I still need to get in the protein. I finally got the results to a allergy tes I hadt done a few months and we found some of my allergies have increased , so now I having to really watch reactions or cut the amount I eat or totally avoid it . I have allergies to milk, eggs, peanuts, soy (increased) , gluten ( there was a slight reaction, checking me for celiacs at next appt.), berries, honey, cantaloupe, watermelon, honeydew, salmon, tuna, kiwi, and imitation crab meat. They sent a epi pen prescription which I already carry one for bee allergy but now want me to carry it at all times just in case. Thus explains the hives and recent case of throat feeling like it was closing; he said my rashes, the way my skin scars and the way I feel my get tons better if I start to avoid the allergens I still consume .

    i make the best roasted veggies! I use some frozen mixed veg, potatoes, bell peppers, onions, garlic, carrots and whatev else i have. i spice with seasoned salt, mrs dash original, oregano, paprika, parsley, thyme and cracked mixed pepper. i bake with lest life butter two tsps split up throughout the pan. roast at 350 for 40 mins0it and add water after first 15 mins and every tens mins after, check it to see the doneness. its hella good, low cal and low fat enjoy if u try

    ENCHILADA SOUP

    2 TBS. Vegetable Oil (or I use Extra Virgin Olive Oil)
    1/2 C. Chopped Onion
    1/2 C. Chopped Green Pepper
    1 TBS. Minced Garlic
    14oz. Can of Vegetable Broth
    2 14oz. Cans Mild Red Enchilada Sauce
    4.5oz Can Diced Green Chiles(I use 2 cans)
    14oz. Can Diced Mexican Style Tomatoes
    15 oz. Can Black Beans(Undrained)
    2 C. Canned White Hominy(Drained)
    2 TBS. Taco Seasoning Mix

    Sautee Onion, Green Pepper and Garlic for 2-3 Minutes or until onions are transparent
    Pour in all ingredients and bring to boil. Lower heat to low/medium heat and simmer for 20 minutes.
    Garnish with Tortilla Chips, Shredded Cheese and Sour Cream.

    It's actually vegan - and although I eat dairy this site (and her books) are amazing. A lot of the recipes are designed to be low cal as well as she put out a book called 'Appetite for Reduction'

    I love this book because it's really different from other non-meat recipe books and my carnivorous and non-dieting boyfriend also really loves them!

    The internet has many recipe sites. I use recipe.com quite a bit, but there are sites that specialize in vegetarian recipes.
    The good old public library has whole shelves of cookbooks to try out.
    Many grocery stores offer recipes on their websites.
    Many food manufacturers, such as Campbell and Kellogg, have recipes on their websites too.
    Good Luck and try Goggling Carrot Leek Soup. Yum!

    I made a new soup last night and it was delicious, fast, easy and cheap to boot. I think all of the ingredients would work for your dietary restrictions too.
    I sauteed about 1 C. chopped white onion and severl minced garlic cloves in about 2 T. olive oil (could cut this out to reduce calories) for about 6-8 minutes or until translucent. Then I added 2 t. cumin and 1 t. chili powder. Pour in 2 cans of rinsed and drained black beans, 1 can of diced tomatoes (I used tex mex roasted), 2 C. broth (either veggie, chicken, or broth will work fine), 1 t. salt and about 1/4 C. chopped cilantro. Bring the soup to a boil and reduce the heat to simmer. To thicken the soup a bit, I pureed about half ot he soup in the blender and added it back in to simmer. Once it's hot, it's ready to go. You can garnish with more cilantro. The recipe I used didn't call for this but I added one chipotle pepper in adobo sauce to give it a smoky flavor. It made the soup very spicy but that was ok with me. I'm sure it would be delicious without this if you wanted to leave it out. Good luck!
  • Thank you all so much! Going to try all those recipes and check the sites. I'm hoping to get my meat and potato hubby to try a lot of it. Cooking two meals is not fun!

    I love Spaghetti Squash Parmesan! I just posted in on the recipe board as well actually. Its so filling, even my protein loving husband doesn't complain that there is no meat.
