Dijon Celery Root/Parsnip Mash

Roughly chop one celery root and one parship. Boil until tender in salted water. Puree in blender or food processor with 1 TBSP Dijon Mustard. Add water or chicken stock to desired consistency. Season to taste. Delicious, IMHO. Great with roasted salmon and broccoli.
