Cranberry Almond Biscotti - 64 calories each!

I just finished baking these and they are really good. They'll be a great treat with my morning coffee!
Cranberry Almond Biscotti
Makes 32 cookies - 64 calories and 1g of fat each
1/2 cup sugar
1/4 cup Splenda
2 Tbsp. Canola Oil
2 Tbsp. Unsweetened Applesauce
1/2 cup Egg Beaters
2 tsp. Vanilla Extract
1 tsp. Almond Extract
1-3/4 cups flour
1 tsp. Baking Powder
1/4 tsp. salt
1/2 cup finely chopped almonds
1/2 cup dried cranberries
In a small bowl, beat sugar, Splenda, oil and applesauce until blended. Beat in Egg Beaters, then extracts. Combine the flour, baking powder and salt; gradually add to sugar mixture and mix well (dough will be very thick and sticky). Stir in almonds and cranberries.
Divide dough in half. With floured hands, shape each half into a 12" by 2" rectangle on a parchment (I use Silpats) lined baking sheet. Bake at 350 for 18-20 minutes or until set.
Place pan on wire rack. When cool enough to handle, transfer to a cutting board; cut diagonally with a serrated knife into 3/4" slices. Place cut side down on ungreased baking sheets. Bake for 12-14 minutes or until firm. Remove to wire rack to cool. Store in an airtight container.
