Scrambled eggs!

Been making real yummy scrambled eggs! Heres a pic of what I made today

2 eggs
2 cups baby spinach
1/4 cup diced red peppers
1 piece diced garlic
1/4 diced onions
1 piece healthy ones honey ham
1 piece reduced fat american cheese
1/4 cup dice tomatoes

I saute the peppers, onions and garlic first. Then add the ham and tomatoes for a few seconds to warm it up. Next throw in the spinach and cook just till they begin to wilt. Then finally you add the eggs and scramble away! I also put pepper on to taste at the end. :laugh:

    This would be great for dinner, or for weekend breakfast. But I'm too sleepy and uncoordinated to cook anything on weekday mornings. Last time I tried, I dropped one of the eggs and ended up smashing it between my stomach and the counter in a misguided attempt to catch it with my body.

    a few table spoons of salsa adds a little kick to them!!!
