Lunch Ideas!

Normally for lunch I have a salad. But, I would love to spice up my lunch routine... Any suggestions?

    Tuna with sliced apple
    Peanut butter and banana sandwich
    Cottage cheese with fruit and crackers

    I always make a double portion of dinner and that really allows
    me to switch it up everyday....sky's the limit!

    Low-fat hummus or tzatziki with raw veggie sticks like cucumber, carrot, celery.

    Tzatziki:

    900g low-fat Greek yoghurt
    1/2 cucumber with peel, grated
    1 clove garlic, pressed
    2 tablespoons fresh lemon juice
    2 teaspoons grated lemon zest
    3 tablespoons chopped fresh dill
    1 tablespoon salt
    1 tablespoon freshly ground black pepper

    Hummus: Blend all ingredients in a food processor

    Juice of 1-2 lemons
    2 tbs extra virgin olive oil
    Approx 2-3 cloves of garlic
    1 cans chickpeas, drained
    1/3 cup tahini (sesame seed paste)
    Half tsp cayenne pepper
    Salt and white pepper
    1/2 bunch cilantro or parsley (optional)
  • I'm by no means a healthy lunch guru but as of lately I've been really digging leftovers. Today Im having a stirfry with brown rice and chicken for lunch.

    I was takin to work cottage cheese and fruit. Now that I will be workin night shifts I plan to take black beans, brown/wild rice and chicken.
